Chilli and Coconut Stir-fry

What you need

  • Canola or sunflower oil 2 Tablespoons.
  • Lean chicken beef or pork 500g, cut into strips.
  • Minced garlic 2 teaspoons.
  • Root ginger 1 teaspoon grated.
  • Vegetables 6 - 8 cups chopped e.g. carrots, broccoli, onion, peppers, celery, mushrooms, cabbage, yams etc.
  • Sauce:
    • Sweet chilli sauce ¼ cup.
    • Light coconut cream ½ cup.
    • Soy sauce ¼ cup.
    • Oyster sauce 2 tablespoons.
    • Beef stock ½ cup.
    • Cornflour 2 teaspoons.

Preparation time: 20 minutes
Cooking time: 15 minutes

Method

  • Heat 1 tablespooon of the oil in a non-stick fry pan.
  • Add meat strips and stir fry until cooked.
  • Heat up a wok with remaining oil.
  • Add ginger, garlic and vegetables and stir-fry on high heat for about 5 minutes.
  • Mix sauce ingredients together and add to the vegetables along with the meat.
  • Stir over medium heat until the vegetables are heated through and the sauce is thickened.
  • Serve with rice.
