Everyday Toasted Muesli

Toasted Muesli

What you need

Wholegrain oats, 1kg
Pumpkin seeds, 1/2 cup
Sunflower seeds, 1/2 cup
Whole almonds, 1/2 cup chopped
Boiling water, 1 cup
Brown sugar, 1/3 cup
Vanilla or cinnamon, 1 teaspoon

Preparation time: 10 minutes
Cooking time: 30 minutes


Preheat oven to 150oC.  Place oats, seeds and nuts in a large roasting dish.  Mix well
Mix boiling water with sugar and vanilla/cinnamon; stir to dissolve.  Add to oat mixture and mix well.  Bake for around 20 minutes, stir then return to oven.  Stir every 10 minutes until the mix is golden brown and dry (at least an hour).  Turn heat off and leave muesli to cool in oven. When cool store in an airtight container

Makes around 20 x 1/2 cup serves.
