Banana and raisin bran muffins
What you need
- Self-raising flour 2 cups.
 - Unprocessed bran 2 cups.
 - Raisins ¾ cup.
 - Bananas 3, mashed.
 - Baking soda 1 teaspoon.
 - Trim milk 1 ½ cups.
 - Margarine 50g.
 - Golden syrup or maple syrup 6 tablespoons.
 - Eggs 2, lightly beaten.
 
Preparation time: 10 minutes
Cooking time: 15-20 minutes
Method
- Preheat oven to 190°C.
 - Place first 5 ingredients in a bowl.
 - Dissolve baking soda in milk.
 - Melt margarine and golden/maple syrup together in microwave or in a small saucepan and add to dry mix with milk; mix until blended.
 - Do not over mix as this will toughen the mixture.
 - Spoon into non-stick muffin pans (¾ fill); bake for 15-20 minutes or until skewer comes out clean.
 - Cool in tray for around 5 minutes then remove onto wire rack.
 
Makes 12 medium or 24-30 mini muffins
