Chocolate and black bean brownie

What you need

  • Black beans 1 x 400g can drained and rinsed
  • Eggs 3 medium
  • Sugar 5 tablespoons
  • Salt a pinch
  • Vanilla essence 2 teaspoons
  • Cocoa powder 1/4 cup
  • Canola or rice bran oil 1/3 cup
  • Coconut 1/3 cup
  • Dark chocolate chips 1/3 cup
  • Walnuts 1/3 cup chopped

Preparation time: 10 minutes
Cooking time: 20 minutes


  • Preheat oven to 180ºC and line a 20cm square tin with baking paper
  • Add beans, eggs, sugar, salt, vanilla and cocoa to a food processor and blend until smooth.  Slowly add oil and process a few seconds more
  • Stir in coconut, chocolate chips and walnuts. Pour into prepared tin and bake for 20 minutes or until centre is set.  Cool for 5 minutes before turning out and cutting into small squares (around 3cm square). 

Makes around 25 pieces
