Bean Booster

What you need

  • Canola oil 1 tablespoon polyunsaturated.
  • Celery 1 cup chopped.
  • Onions 2 medium, finely chopped.
  • Baked beans 1 x 400g tin in tomato sauce.
  • Unsweetened yoghurt 2 tablespoons.
  • Freshly ground black pepper to taste.

Preparation time: 10 minutes
Cooking time: 10 minutes

Method

  • Heat oil in saucepan; cook celery and onions until lightly browned and softened.
  • Add baked beans and yoghurt.
  • Heat until warmed through.
  • Add freshly ground black pepper to taste.

Serves 4

Serving Suggestions

  • Use as a topping/filling for pizza, baked potato, kumara split or pita bread. Top with grated cheese and grill.
  • As a filling for pancakes - top with low fat sour cream or yoghurt and finely chopped spring onions or parsley.
  • In taco shells - serve with selection of finely sliced salad vegetables and grated edam cheese.
