Red Lentil Dhal

What you need

  • Oil 2 teaspoons.
  • Onions 2 medium, chopped.
  • Curry powder 1 tablespoon.
  • Red lentils 1 cup.
  • Stock or water 2 cups.
  • Chopped vegetables 2 cups e.g. carrot, celery, peppers, zucchini.
  • Chopped tomatoes 1 x 400g can.*
  • Spinach or silver beet 1 cup, chopped (or use 100g frozen).
  • Chickpeas (optional) 1 x 400g can, drained.

* Or use Watties Indian tomatoes and remove curry powder

Preparation time: 10 minutes
Cooking time: 25 minutes


  • Soften onion in oil; add curry powder and cook a few minutes longer.
  • Add lentils, stock, chopped vegetables and tomatoes; cook for around 20 minutes or until lentils and vegetables are soft.
  • Add spinach (and chick peas if using) and simmer for a further 5 minutes. Serve with brown rice.
