Italian meat balls

What you need

  • Lean minced beef 500g.
  • Soft breadcrumbs (wholemeal if possible) 1 ½ cups.
  • Rolled oats ½ cup.
  • Cold water 2 tablespoons.
  • Crushed garlic 1 teaspoon.
  • Chopped parsley (optional) ¼ cup.
  • Dried basil 1 teaspoon (or 2 tablespoons chopped fresh basil).
  • Grated carrot ½ cup.
  • Onion 1, finely chopped.
  • Egg 1
  • Garlic salt 1 teaspoon.
  • Curry powder 1 teaspoon.

Preparation time: 15 minutes
Cooking time: 4 minutes in microwave, 25-30 minutes in oven


  • Preheat oven to 180°C.
  • Mix all ingredients together in a bowl; shape into walnut sized balls and place in one layer on a microwave proof plate.
  • Cover plate with plastic film and microwave on high for 4 minutes.
  • Transfer to a baking dish, cover with a sauce and bake for around 25 minutes.
  • Sauce: Mix a 400g can of crushed tomatoes with a jar of pasta sauce
  • Mix 2 tins crushed tomatoes with 2 teaspoons of sugar and 1 teaspoon of dried herbs e.g. oregano, basil or Italian herbs.
  • Mix a 400g can of crushed tomatoes with a 400g can of tomato soup.
