Italian Sausage Hot Pot

What you need

  • Olive oil 2 teaspoons.
  • Onion 1, chopped.
  • Crushed garlic 1 teaspoon.
  • Green pepper 1, chopped.
  • Red pepper 1, chopped.
  • Italian sausages 6 lean, boiled and sliced.
  • Pasta 250g e.g. spirals/macaroni/penne.
  • Chopped tomatoes 1 x 400g can.
  • Chilli beans or Mexican baked beans 1 x 400g can.
  • Beef stock 2 cups.
  • Tomato sauce or tomato paste ¼ cup.
  • Frozen green beans 2 cups.

Preparation time: 15 minutes
Cooking time: 25 - 30 minutes


  • Soften onion and garlic in oil in a large heavy bottomed pan; add chopped peppers and cook for a few minutes until softened.
  • Add sausage slices, pasta, tomatoes, chilli beans, beef stock and tomato sauce/paste; cover pan and simmer for around 20 minutes or until the pasta is cooked.
  • Add frozen beans and cook for a few more minutes before serving.
  • Season to taste and serve in large bowls with a garnish of thick yoghurt, grated parmesan and fresh chopped parsley.
