Fruit crumble

What you need

  • Any canned, stewed or bottled fruit, enough to fill a medium baking dish.
  • Crumble topping:
    • Rolled oats 1 cup.
    • Coconut ¾ cup.
    • Cinnamon 1 teaspoon.
    • 10 dates (soaked in boiling water for 30 minutes).
    • Chopped walnuts or almonds ¼ cup.
    • Date soaking liquid 2 tablespoons.

Preparation time: 10 minutes + time needed to stew fruit
Cooking time: 20 minutes


  • Preheat oven to 180°C.
  • Place fruit into medium ovenproof baking dish; cover with the topping and bake for about 20 minutes - topping should look browned and crisp.
  • Serve with Greek yoghurt or custard.
  • Crumble topping:
    • Place all ingredients except date liquid nto a food processor; process briefly till just chopped. Transfer to a bowl
    • Add date liquid and mix in.
    • The mixture should bind together when pressed between thumb and fingers but should not be sticky or wet.  Add more liquid if needed
