What you need

  • Toasted finely ground wholemeal breadcrumbs 1 cup.
  • Brown sugar ⅓ cup.
  • Drinking chocolate 5 tablespoons.
  • Instant coffee powder 1 teaspoon.
  • Brandy, rum or water 2 tablespoons.
  • Cyclops coffee yoghurt 500g.*
  • Cyclops unsweetened low fat yogurt 250g.

Preparation time: 15 minutes
Resting time: Overnight is best


  • In a small bowl, place breadcrumbs, sugar, drinking chocolate, instant coffee powder and alcohol, mix to combine.
  • In a separate bowl, mix coffee yoghurt with plain yoghurt.
  • In a glass serving bowl or individual glass serving bowls, place ⅓ of the crumb mixture in a layer across the bottom. Add ⅓ of the coffee yoghurt mixture, then repeat this layering 2 more times.
  • Top with some extra drinking chocolate or some finely grated chocolate.
  • Serve with fresh, tinned or frozen berries.

* If you cannot get coffee yoghurt, make a coffee syrup by heating together the following ingredients until thickened. Cool and stir through 500g plain unsweetened yoghurt. 

  • Instant coffee powder 2 tablespoons.
  • Water ¼ cup.
  • Sugar 2 tablespoons.
  • Cornflour ½ teaspoon.
